Saffire Freycinet

The Freycinet Peninsula extends south-eastwards from Tasmania’s coastline and is a fully protected national park, including the internationally acclaimed Wineglass Bay. Saffire is located on the inside of the gentle curve of sandy coastline that joins the peninsula to mainland Tasmania.  Saffire overlooks the wide expanses of Great Oyster Bay, where migrating whales and dolphins come to play; calamari and squid in-season spawn in the rocky outcrops; local farms produce fresh, succulent oysters in some of the world’s cleanest waters; and fishing boats and trawlers bring in their daily catch of rock lobster, scallops and deep sea fish, dripping and salty-sweet straight from the ocean.  The dominant view from Saffire’s every window is the pink-hued granite of the peninsula’s Hazards Mountains,providing a spectacular and ever-changing backdrop from morning to nightfall. Suites: All of our suites are luxuriously appointed, featuring the best in design and furnishings and capturing the unique nature of the surrounding coastline. All suites are designed for the utmost privacy while taking in the magnificent views of the Hazards Mountains, crystal-clear blue waters and white sandy beaches.  The furnishings feature an eclectic mix of traditional and contemporary, with locally made timber pieces alongside mid-century classics such as chairs designed by Charles and Ray Eames and Herman Miller.  All beds have luxurious 1000 thread count Egyptian cotton sheets, and suites include Wi Fi internet access and flat screen televisions. Our mini-bars (included in your suite rate for the duration of your stay) are stocked with premium Tasmanian produce, wine and beers. A small selection of reading materials is available in your room, but if you have any particular preferences please let us know.  The suites are designed to relax and rejuvenate, indulge in reading and lazing the days away, and to find connection with the environment to heal and restore balance. Dining: Saffire’s restaurant, Palate, prides itself on showcasing the best Tasmania has to offer, and provides tailor-made experiences to suit all guests.  From early morning to late evening, food innovation in the kitchen does not compromise the true flavours of home-grown produce. Palate restaurant specialises in tailoring dining to all guests’ requirements.  Multi-course degustation menus matched with outstanding local wines are a speciality, with menus designed around what is fresh out of the water or the paddock on any given day. If you prefer you can consult the chef for a masterful interpretation of your favourite dish made from the finest local ingredients, or choose from the à la carte menu – we’re at your service.  Furnished with a contemporary, eclectic mix of designer furniture, Palate seats up to 40 guests over two tiers of seating, allowing each diner to take in the spectacular panoramic view. Taking its inspiration from the home environment, our lounge is the ultimate in “classic cool” – a sumptuous place to collect a book from the library or meet for a drink, and then sink into our eclectic mix of chic furniture from original 1950s designers and manufacturers.  A nightcap over a board game by the five-metre fireplace would be the perfect way to wind down. And on balmier nights you may wish to retire to the courtyard to watch a breathtaking Freycinet sunset. Leisure: Saffire Freycinet also features Spa Saffire with highly skilled therapists and masseurs, a gym with state-of-the-art cardiovascular equipment, a broad range of activities and experiences, and more. Exclusive Use: Saffire offers tailored exclusive use options for special occasions, small conference gatherings and incentive options.  Our restaurant dining room seats up to 40 guests and offers à la carte or tailored dining options featuring the best in local produce.  Set around a beautifully crafted board table, designer made from Tasmanian timbers, The Boardroom hosts 20 delegates; alternatively, the room can be arranged in theatre style for 40. It features state-of-the-art audio visual technology and communications, including 160cm LCD screen, Video Conferencing, PolyCom, and personal Wi-Fi connectivity for up to 20 delegates. This area can even be converted into a cinema.

Our four Private Pavilions have facilities for Saffire’s highly acclaimed Chef to cook for you in your Suite.  Served to your private dining room can be anything from à la carte to degustation; even your favourite dish. $150 per suite plus standard restaurant pricing. PLEASE NOTE: Rates exclusive and inclusive of dinner and dinner beverages are available. Premium beverages and Saffire Signature Experiences are not included in your accommodation rate. Occupancy: Maximum occupancy per suite is three people. Extra guests at Saffire are charged as follows, and with the following inclusions: Extra person ADULT rate is $450 extra per night per adult gross (including dinner and dinner beverages, and bedding, breakfast, lunch, and age-appropriate beverages and activities) and $300 extra per night gross (excluding dinner and dinner beverage, but including bedding, breakfast, lunch, beverages and activities). Extra person CHILD (aged 5-17 years inclusive) rate is $300 extra per night gross including dinner (and bedding, breakfast, lunch, and age-appropriate beverages and activities) and $200 extra per night gross (excluding dinner, but including bedding, breakfast, lunch, and age-appropriate beverages and activities).   Single occupancy rates are $250 less than the gross Dinner Inclusive Rates Single occupancy rates are based on a per room per night basis, including breakfast, lunch and dinner for 1 person, complimentary mini bar and selected deluxe beverages until dinner, Saffire activities and a $100 spa credit toward treatment per suite ($200 for Premium Suite). Children 0-4 years at the date of arrival attract no charge. Guests 5 years and above at the date of arrival attract the additional person charge detailed above.
